It is believed eating these foods on New Year's Day or simply any day in January will bring good luck and prosperity for the remainder of the year. Collard Greens represent the green of money, black-eyed peas symbolize coins, cornbread stands for gold, and ham simply flavors the mix.

Black eye peas recipe vegan or non - Vegan

ingredientS:

2 cans of black Eyed Peas ( 15.5 OZ can)

2 large carrots diced

2 celery ribs diced

3 cloves garlic minced

1 onion diced

4 cups Vegetable or chicken stock

1 14.5 oz can diced tomatoes

Black pepper and salt to taste

1 tablespoon house seasoning

1 teaspoon ground red pepper

Optional - one boneless ham steak (7 oz) Diced

instructions:

Add olive oil, diced garlic ,carrots, onions and celery to pot and sauté till golden.

Add your vegetable or chicken stock to pot and let simmer for 30 min or till carrots are Tender.

sauté ham steak on each side, dice and add to pot .

Add 2 cans black eye peas and let simmer for 45 Minutes.

add salt and pepper to taste

Serve with corn bread or bread of choice.

Collard Greens recipe - Vegan or Non vegan

Ingredients;

1 Large bunch collard greens / 1 pound

1 small onion diced

2 cloves garlic minced

5 slices of bacon chopped / optional

2 cups chicken broth or vegetable broth

Salt and pepper to taste

Instructions :

Wash greens and using a sharp knife cut out the woody stem. Cut greens into pieces.

In your pot add olive oil, onions and garlic and Sauté till golden.

In a separate pan fry your 5 slices of bacon and then chop into pieces and add into the pot.

Add your collard greens and 3 cups of chicken / vegetable stock.

Cook at a simmer until greens are tender, 45 min to an hour.

Season with salt and pepper to taste.
